Instant tofu yogurt
VEGAN YOGURT INGREDIENTS
Tofu: Fresh tofu is best here as it doesn’t leave a strong tofu-soy flavor. Either soft, medium-firm, or firm depending on the style of tofu you’re going for.
Frozen Fruit: I typically will use frozen fruit, as I always have a stock of frozen berries in my freezer. Sometimes I use fresh strawberries, which really is my favorite version. You can also use denser fruits like bananas and mango for creaminess.
Cashew Butter: Makes it super creamy like actual yogurt! Coconut cream also works really well here for a nut-free version. However, I prefer to use tahini.
Lemon: Don’t skip it, it adds the tang that yogurt needs.
Protein Powder (Optional): Although optional, I highly recommend adding just a bit of protein powder for texture. Plus, if you use vanilla protein powder it adds a touch more sweetness and flavor.
The best thing about this vegan yogurt is that you don’t need any fancy equipment and it’s not complicated to make. I love yogurt so much, that it really was the hardest thing to give up when I went Vegan. After discovering I could make it myself, it has become a weekly staple. It really is one of the easiest recipes to make!
Ingredients
Regular ‘Yogurt’
1 block soft tofu (200g)
1 teaspoon cashew butter (16g // or sub coconut cream or tahini for nut-free)
1 cup frozen fruit (about 120–150g total)
1/4 wedge of lemon or 1 1/2 tbsp lemon juice (20g)
Greek ‘Yogurt’
1/2 block medium-firm or firm tofu (200g)
1 tablespoon cashew butter (16g // or sub coconut cream or tahini for nut-free)
1 cup frozen fruit (about 120–150g )
1/4 wedge of lemon or 1 1/2 tbsp lemon juice (20g)
Optional Add-ins:
2 tbsp vanilla protein powder (highly recommended) (16g)
1–2 tbsp sweetener of choice: maple syrup, coconut sugar, agave, 2 dates
1 tsp vanilla extract (5g)
1 probiotic capsule, insides only
Toppings
Sunflower seeds
Rolled oats
Pepitas
Chia seeds
Almonds or other nuts
INSTRUCTIONS
Blend all the ingredients together until smooth and creamy.
Serve right away or place into an air-tight container in the refrigerator for up to 3 days.
NOTES
Use a high-powered blender or Vitamix for a smooth consistency.
Layer in a glass jar using the toppings.
