Watermelon mint salad

Sweet, savory, and totally refreshing. Flavors and textures come together to create a fresh fruit salad. It’s got a little kick to it from the red onion and pepper, making it versatile as both breakfast or a savory dessert.


Ingredients

  • 4 cups seedless watermelon, cut into 1" pieces

  • 1 cup thinly sliced cucumber

  • 2 tablespoons chopped fresh mint

  • 1 tablespoon chopped red onion

  • 2 tablespoons olive oil

  • salt and pepper, to taste

  • Vegan feta (optional)


Instructions

Toss all the ingredients together in a large bowl. Enjoy!
