Mashed potatoes with garlic mushrooms & brussel sprouts.

These soft and creamy mashed potatoes, are infused with garlic butter mushrooms and roasted brussel sprouts.  A satisfying and delicious side dish to your main course. bursting with flavor and nutrients, you won’t be disappointed.

Ingredients

For the potatoes:

  • 6 medium potatoes, washed, peeled, and quartered

  • 1/2 cup milk

  • 2 tbsp butter

  • Salt

For the mushrooms:

  • 5-6 brown mushrooms

  • 1 garlic clove

  • 1 tbsp butter

  • Salt

For the Brussel sprouts:

  • 6 medium green Brussel sprouts, outer leaves removed, cut in half

  • 1 tbsp olive oil

  • Salt & Pepper


instructions

Boil a pot of water, add the potatoes and cook until soft.

Meanwhile, preheat the oven to 180C.

Line a baking tray with parchment paper.

Add the brussel sprouts, drizzle over the oil, and season with salt and pepper. Cook for 15-20 minutes or until golden.

In a pan melt the butter, add in the garlic and cook until fragrant. Add the mushrooms and season with a sprinkle of salt. Cook until soft.

Once the potatoes are cooked, drain the water. Add in the milk, butter, and salt. Mash until soft and creamy.

To a bowl, add the potatoes, mushrooms, and then brussel sprouts. Garnish with some fresh rosemary. Enjoy!
