Ginger Beer

Ginger is used as both a spice and for medicinal purposes for centuries among many different cultures. From digestive issues to nausea, pain relief to treating inflammatory conditions, Ginger is a great addition to any diet.

This easy homemade ginger beer recipe is healthy, spicy, fizzy, and delicious!

Ingredients

  • 2 -3 tablespoons freshly grated ginger root

  • 2-liter water, divided (8 cups)

  • 4 tablespoon coconut sugar

  • A pinch of sea salt

  • 1/2 cup or 120 ml lemon juice

  • 1/2 teaspoon brewer's yeast (use instant yeast)

  • Maple syrup to taste (see notes)

  • Mint (garnish)

  • Lemon slides or wedges (garnish)

  • 4 x 750ml screw top bottles (or mason jars)


Instructions

In a pot bring grated ginger and 2 cups of water to a boil. Add coconut sugar, and a pinch of salt and cook until the sugar is dissolved, for about 3-4 minutes, stirring occasionally. Strain the liquid through a sieve (strainer)

Add the rest of the water (about 6 cups), lemon juice, and yeast. Stir to dissolve and pour into four 750ml screw top bottles (or mason jars) using a funnel.

Let it ferment under room temperature for 48 hours, then transfer to the fridge to stop the fermentation process. Add extra sweetener of your choice before serving (see notes).

Serve ginger beer chilled with a few ice cubes.

notes

Make sure to dissolve your additional sweetener in a small amount of ginger beer before pouring it back into the bottle. Close the bottle and shake well. Don't open directly after shaking!

If you prefer instant ginger beer, don’t add the yeast, or ferment, and replace 6 cups of water with sparkling water.

Refrigerate and use within 48 hours.
